Those recipes actually sound pretty tasty. I could never go vegan (or vegetarian for that matter), because I love the taste of meat, but props to those of you who are dedicated to the cause. I dated a guy in college who was a vegan, and it was an interesting experience grocery shopping with him. My eyes were totally opened.

And it’s definitely a good thing the Hubs doesn’t read blogs (that I know of), because he loves the gorgeous, super-skinny chicks (how he ended up with me, I’ll never know). I’m totally jealous of someone who can eat so many cupcakes and not gain tons of weight. = )

There are vegans out there who eat the same boring foods over and over again (but even meat-eaters do that), but it’s also totally true that there are tons of vegans out there that can cook. You just have to put some effort into it!
